Ok guys, so if you’ve been following along with me on Instagram (@whatpaige_) or if you just know me in general, you know that I love a good meal prep because I’m usually pretty busy and I want to keep my eating relatively on track. I give in to temptation with workday treats occasionally, but when I’ve got a lunch and dinner planned out for me, I’m less likely to eat the pizza or grab takeout on my way home.
Honestly I usually keep my meal prepping as simple as possible, I will cook a protein, carb, and veggie separately and throw it into a dish, but since meeting Adam I’ve really tried spicing things up so we don’t get bored. He loves tacos… it’s one of the first things he told me, and we usually end up using our date nights to go to Mexican restaurants. So to keep things simple today I’m going to meal prep the EASIEST and seriously most delicious chicken tacos.
To make things even easier, and to make it so I can multi-task by cooking our dinners AND get laundry done, I’ll be making these bad boys in the crockpot (the best thing ever invented). So grab your meal prep containers (these are my favorite), and get ready to have delicious chicken tacos – or at least the foundation for them!
(Side note: I’m not re-inventing the wheel with this one… there are so many recipes like this out there, this is just my favorite take on them!)
Okay guys, here we go. First, throw your chicken in the crockpot (add a liner if you want a super easy clean-up). Top the chicken with your taco seasoning (I usually add a little extra cayenne pepper for a spicier dish), and pour a jar of salsa on top. Cook for 3-4 hours on high, and you’ll return to an amazing smelling kitchen and perfectly cooked chicken ready to shred.
When I’m all done shredding the chicken I usually have soft shell tortilla boats ready for Adam (because he loves tacos), but I love using this chicken for burrito bowls. So separately I’ll have cooked some rice, beans, and peppers/onions, and I can top my bowls with extra salsa and shredded lettuce. If you’re in a time crunch, and don’t want to cook everything extra for burrito bowls, you can buy a bag of Ready Rice where the rice and beans are already seasoned and ready to eat in 90 seconds… yum.
Basically portion our your food however you’d please, leave your lettuce or taco shells separate in bags so they don’t get soggy, and pack it all away for delicious lunches and dinners!
Notes:
- I usually use 1 jar of spicy salsa – it gives the chicken an extra kick, and it’s so good to use to top burrito bowls.
- For every 2 large chicken breasts I use 2 Tbsp of taco seasoning… this is just an easy rule of thumb I follow.
- If you don’t want to sauté veggies on the side for your bowls/tacos, throw in some diced peppers about 1 hour before your chicken is ready to pull – they’ll cook down nicely and save you some time!
- This chicken is great for more than just tacos and burrito bowls… bag it up for salads, quesadillas, or just eat it on its own!
