Cinnamon & Stevia Roasted Pecans

A mildly sweet but oh-so-delicious treat!

  • 1 tsp Pure Vanilla Extract
  • 1 Egg White
  • 8 oz Pecans
  • 1/2 tbsp Ground Cinnamon
  • 2 tbsp Stevia


  1. Preheat oven to 250o.

  2. Line baking sheet with foil and spray with a non-stick cooking spray.

  3. In a large bowl, whisk together the egg white and vanilla extract until a froth forms. Add in the pecans and mix until well coated.

  4. In a separate small bowl, mix together stevia and cinnamon. Pour this over the pecans, and mix again until well coated. 

  5. Pour pecans on the baking sheet and spread evenly. 

  6. Bake for 60 minutes total, stirring pecans every 20 minutes.

  7. Let cool before enjoying!
