Cherry & Chocolate Granola Bars

Ingredients

  • 2/3 cup Honey
  • 1/2 cup Creamy Peanut Butter
  • 2 tbsp Truvia Brown Sugar Blend
  • 1 tsp Vanilla Extract
  • 1 tsp Cinnamon
  • 1/4 tsp Salt (optional)
  • 2 cups Quick Oats
  • 2 cups Crispy Rice Cereal
  • 1/2 cup Dried Cherries (roughly chopped)
  • 1/2 cup Mini Chocolate Chips

Instructions

  1. Line a pan (I used an 8x8) with foil and spray with a non-stick spray

  2. Microwave peanut butter, honey, and brown sugar for 1 minute, stir, and microwave for 30 more seconds (you can repeat an additional 30 seconds if you mixture is not smooth when stirring)

  3. Add in vanilla, cinnamon, and salt

  4. Add in oats and mix until evenly coated

  5. Gently stir in the rice cereal, followed by dried cherries and chocolate chips

  6. Transfer mixture to a foil lined pan and press down firmly to pack your bars (apply pressure with either your hands or a spatula/utensil to make sure they stay together)

  7. Place the container in the freezer for 30 minutes to 1 hour until the bars are set (longer time might be necessary for thicker bars)

  8. Remove from container and foil, and slice bars however you'd like. Enjoy!
