Protein Pumpkin Pie Bites

Tis the season for pumpkin everything! I know as soon as I see the first leaf on a tree turn anything but green during the end of the summer in to fall, my mind automatically switches and I become pumpkin and fall obsessed. Sorry if that’s a bit basic for you, I can’t help it!

Today I wanted to share one recipe I’ve been making on repeat this whole season – protein pumpkin pie bites. So delicious, they taste like a bite of real pie, with the benefit of having nutrients and protein included!

Protein Pumpkin Pie Bites

This recipe is so easy to make, I promise you’ll be rolling these out on repeat until you’re ready to switch to a Christmas flavor!

No-Bake Pumpkin Pie Bites

Ingredients

  • 2 scoops Vanilla Shakeology (Vegan)
  • 1/2 cup Instant Oats
  • 1/4 cup Coconut Flour
  • 1 tbsp Stevia
  • 1 tbsp Pumpkin Pie Spice
  • 1/2 cup Pumpkin Puree
  • 1/4 cup Peanut Butter
  • 1/4 cup Blue Agave Sweetener
  • 1 tsp Vanilla Extract
  • 1 tbsp Almond Milk (*optional)

Instructions

  1. In a mixing bowl, combine flour, oats, stevia, and pumpkin pie spice and mix well.
  2. Using a microwave safe bowl, add your peanut butter and agave. Heat on 30 second intervals and mix - continue until combined and smooth. 

  3. Add and stir in vanilla extract and pumpkin puree to the peanut butter mixture.

  4. Pour wet mixture in to the dry mixture and mix well. If the consistency is too dry and not mixing, add almond milk and stir. If the consistency is too wet, you can add in additional oats.

  5. Using your hands, form into small sized balls.

  6. Once finished you can roll in additional sugar and cinnamon (optional).

  7. Refrigerate for 15 minutes before eating.

 Serving size: 2 protein balls (this recipe made 20)

 Calories: 127cal | Carbs: 18g | Fat: 4.6g | Protein: 5.6g | Fiber: 3g | Sugar: 9g


Notes:

  • I have never tried these with normal protein powder, they’re perfect for the consistency of Shakeology, and I love the benefits that this protein offers. 
  • If you don’t think you’ll be able to eat all of your protein bites within 5 days, I’d recommend throwing them in the freezer… they’re even more delicious if possible!

These are so simple, and such a quick way to make a healthier treat! I love the benefits of adding in a nutrient dense powder, and that these give me a quick boost of energy before a workout or while I’m on the go.
